Turkey Taco Mac n Cheese



This is an easy and filling recipe we absolutely love! You can also make it ahead of time, store it in the fridge, and pop it in the oven at dinner time.



What you will need:

1 lb 93%lean 7%fat ground turkey (you can also use ground beef or chicken)

1 1/2-2 cups elbow macaroni

Olive oil spray

1 1/2 cup shredded sharp cheddar cheese

1 cup shredded “Mexican style cheese blend” (Monterey Jack, queso, asadero, and mild cheddar cheeses)

1/3 cup sour cream

1 10 oz can tomatoes and chilies mostly drained leave a little juice

Black pepper, paprika, cayenne, garlic powder, salt, and chili powder to taste

2 tablespoons ranch dressing

2 tablespoons ketchup

1/2 cup milk

Italian style bread crumbs

Hot sauce

Round glass bakeware dish

Medium pot

Medium skillet

Medium mixing bowl




Directions:

  1. Preheat oven to 375 degrees and begin boiling water for macaroni

  2. In mixing bowl, combine cheese, sour cream, ranch, ketchup, milk and set aside

  3. Cook macaroni for about 1-2 minutes less than the recommended time. While the pasta boils, brown ground turkey adding black pepper, paprika, cayenne, garlic powder, salt, chili powder, canned tomatoes and chilies with a little bit of the juice to keep the meat moist.

  4. When the pasta is done boiling, combine macaroni with cheese mixture

  5. Spray glass bakeware dish lightly with olive oil cooking spray. Beginning with pasta and cheese mixture, layer pasta and ground turkey. Sprinkle more cheese (optional) and bread crumbs on top.

  6. Bake covered for 20 minutes, uncovered for 10. Remove from oven and let stand for about 5 minutes.

  7. Serve with your favorite hot sauce drizzled on top, and Enjoy!
