Surprisingly Easy Buttery Flakey Pie Crust

There is absolutely nothing wrong with buying a pre-made store bought pie crust. However, if you are going to take the time to make a pie, why not go all out? Now that fall has officially arrived in Ohio, I have been doing nothing but baking. Recently I have been experimenting a lot with different types of dough, and think I have finally nailed the pie crust recipe! It really isn't that hard to make, and the only time-consuming part really is waiting an hour for the dough to chill. This crust melts in your mouth and bakes really evenly. What it ultimately boils down to I think is properly layering the ingredients, using ice-cold water, and chilled cubed butter.


For this recipe, I used my Ninja Professional Plus Blender on the "pulse" setting as I slowly added the water, and it mixed the dough perfectly. I cannot say enough good things about this blender, I use it for everything! You could use any food processor, or if you are brave mix it by hand! The important this is that the dough is completely mixed and has a slightly sticky texture.


Ingredients

2 sticks (1 cup) unsalted chilled cubed butter

8-10 TBSPs ice water

2 1/4 cups unbleached natural all-purpose flour

1/2 TSP salt


Unslated Butter Cubed and Chilled

Directions

  1. Cut butter into cubes (about 1/4 inches each) and chill for at least 30 minutes.

  2. Starting with flour, layer the flour, salt, and butter in the blender or food processor and pulse for a few seconds until the mixture looks like clumps of sand.

  3. Gradually add the ice water through the feed tube or top of the blender and continue to pulse until the dough forms (about 15-20 seconds).

  4. Transfer the dough to your work surface and kneed it a bit more if necessary. Divide the dough into two equal sections, and flatten each section to the size of the pie dish (about 9 inches), between two pieces of biodegradable parchment paper or in 1-gallon zipper plastic bags.

  5. Refrigerate for at least an hour or up to 3 days. Remove the dought 2-4 minutes before baking.

  6. Enjoy!
