Mini Pumpkin Pies

Now that fall has officially arrived in Ohio, I have been doing nothing but baking! Pumpkin pie is a family favorite and I love taking it to fall parties and making it for holidays. However, it seems like there is never enough to go around! Instead of making two pies, make these adorable little bite-sized mini pies! They are creamy and packed with pumpkin flavor. Plus they will look so pretty on your table. You will definitely have the favorite dessert at your next fall get together with these tiny tasty treats!




Ingredients

Chilled Mixing Bowl

1 15 oz can 100% Pure Organic Pumpkin Puree (the only ingredient should be pumpkin)

1 8 oz package of cream cheese softened

1/2 cup melted butter

2 teaspoons

Egg whites from 3 eggs

3 1/2 cups powdered or confection sugar

1 teaspoon Cinnamon

1 teaspoon Nutmeg

1 teaspoon Pumpkin Spice

1/8 teaspoon salt


Directions

  1. Make the pie crust. You can follow this link for my buttery flakey pie crust that works perfectly for these! After making the dough, instead of flattening it out, roll it into small dough balls. Flatten them and form them into lightly greased (I used butter for this) muffin tins.They should create little bowls in the tins, about a half-inch thick, that come up to the top of the tin but do not go over the top to much as you do not want the edges to burn. Chill in the refrigerator for at least an hour, or up to three days.


2. Preheat oven to 375 degrees. In a chilled mixing bowl beat the softened cream cheese and egg whites until fluffy. Add pumpkin, spices, sugar, butter, and salt. Mix for 5 minutes.

3. Carefully spoon the pumpkin mixture to fill each pie cup.

4. Bake on the middle rack of the oven for 20-30 minutes, or until the edges are golden brown.

5. Remove from the oven and let cool completely before gently removing the mini pies from the muffin tin with a fork.

6. Garnish with a little bit of whipped cream and enjoy!
