Maple Glazed Brown Sugar Cookies

This is a recipe I usually make in the fall, but it has been sort of grey and gloomy here the last couple of days, so I was in the mood for these cookies. Crispy on the edges, soft and gooey in the center, and so easy to make! They are really perfect for any time of year.


What you will need:

Supplies

· 1 large mixing bowl

· 1 small mixing bowl

· Large nonstick cookie sheet (or large cookie sheet and wax or parchment paper)

· Cooling rack

Ingredients

For the cookies:

· 1 cup and 1 tbsp of softened unsalted butter

· 1 ¼ cups granulated sugar

· ¼ cup plain Greek yogurt (or one large egg)

· 2 tsp vanilla extract

· 2 ½ cups all-purpose flour

· ½ tsp baking powder

· ¼ tsp salt

· ½ - 1 cup brown sugar

For the glaze:

· 1 cup powdered sugar

· 1 cup organic grade a dark maple syrup

· 3-5 tbsp milk




Directions

1. Preheat oven to 350 degrees. If using a regular cookie sheet, line with wax/ parchment paper.

2. In large mixing bowl, cream butter and sugar until light and fluffy (about 1 minute), and slowly add in Greek yogurt, vanilla extract, flour, baking powder, and salt in that order. Mix until well combined.

3. Roll dough into 1 inch balls, then roll in brown sugar until thickly coated.

4. Place on baking sheet about 2 inches apart and bake for 10-12 minutes.

5. While cookies are baking, make the glaze by combining powdered sugar, maple syrup, and milk. Mix until smooth or desired consistency.

6. Allow the cookies to cool on baking sheet for about 2 minutes before moving to cooling rack.

7. Drizzle with glaze and allow to cool completely.

8. Enjoy!!




Additional tips: These taste amazing dunked in coffee (especially black coffee) with your breakfast. They also taste amazing without the glaze if that is too much sugar for you. You can also add a dash of cinnamon with the brown sugar.
